Happy Monday! This is the last Monday of September and I cannot believe that the month is almost over, let alone the year! We are officially getting into fall and the Holiday season- wow! This motivation is for all those people who have monthly goals that have either come through, or you are still working on. Do it until it's done- you TOTALLY can!
The quote is a derivation of Og Mandino's, "I will persist until I succeed," from The Scroll Marked III in The Greatest Salesman in The World. If you do not know the whole story, you can read it here for a bit more Monday motivation. I love this quote and the story behind it. As Dori says, "Just keep swimming." Walt Disney has a good quote relating to this as well which states that around there, they have to keep moving forward. Let's keep moving forward and working towards our goals together until they are done!
Also, this will not be the last motivation for your Monday post. The motivational posts seem to be something many people enjoy and have made an impact for a few of you. I am so happy that you are liking them as much as me and have decided to continue it until the new year. Then, we can decide 2015 in 2015 :)
Until then, I hope all you end-of-month and end-of-year goals are accomplished. You can do it!
Is everyone ready for tax day tomorrow? I know, I know, why did I even bring it up? Instead, let's talk about Pins to help us ignore all those pesky numbers that us procrastinators are needing to check out, and to reward those over-achievers who have their tax goods complete! Because, it is a widely known truth that Pinterest is the best way to forget all that work you need to get done. Side note, I may need to re-evaluate my time management.

Man has is been a while since we had a Meat Free Monday post. Meat Free Mondays are still one of my favorite days of the week and they have been made so much easier thanks to Blue Apron who usually sends us at least one vegetarian meal a week. These may not be your Grandma's mashed potatoes, but they are all really yummy and a great way to switch up a common and expected part of dinner. Believe it or not, but some of these are quite healthy too!
How could these not be healthy (and tasty)? They have smoked salmon for protein and omega-3's, plus they look like the biggest party in my mouth ever.
If you have never had purple mashed potatoes, I would highly recommend it. First off, they taste just like the regular kind and second, they are ridiculously good for you. Purple potatoes have the same amounts of antioxidants as blueberries. Boom.
Since we are on the subject of colorful potatoes, let's talk about these green guys. No, the potatoes are not green, but yes, they are both healthy and green. These use spinach to get that great color and extra health benefits.
These mashed potatoes are pretty traditional, but with one little spin- they use coconut oil instead of butter. That means you are getting healthier fats, fewer calories, and all the benefits of coconut oil in one.
These mashed potatoes have anti-inflammatory benefits since they use cauliflower as one of the main ingredients. Garlic powder also make things sound like one of the best spins on the traditional mashed potato ever.
Let's just agree now, these look like one of the best uses for kale. The kale makes the potato healthier and the potato sounds like a heavenly match for the kale. Win, win.
This mash potato recipe is missing one key ingredient that you may never know by tasting them. That's right, this mashed potato uses cauliflower as a substitute for it's starchy buddy. I am seriously dying to know if these can fool all those potato loving 4-year old's in the world
