Blog Love!

Sometimes, you have blogs that are simply your favorites, and sometimes, you find new blogs that you absolutely love. My absolute favorite blog for life is Emily Henderson's style blog, my favorite blog for health is According to Elle, and my favorite for inspirations is Dale Partridge's. But, when it comes to recipes and great cooking/meal planning ideas, there is a new favorite in town. One of my good friends has [finally] started a blog talking about good, clean eats.

Her blog, Good Choice Eats, is brand new like a teeny baby and I love it. The first recipe has hit is out of the park with complete nutritional analysis of food along with a pricing breakdown. Brittany's health theory is simple, inexpensive eats that are completed with planning ahead and organization. Something this one seriously needs when it comes to the kitchen- especially around the holidays.

I would totally recommend checking out her page and some of her recipes. They are seriously great! Also, here are a few other blogs I love :)

Hands Down, The Best Stuffing Ever!

by Jenni in Food

The best cornbread stuffing ever- and vegetarian!
The best cornbread stuffing ever- and vegetarian!

{via}

Are you looking for a good stuffing for all those friends and family this Thanksgiving?

Every year I make the vegetarian stuffing for myself and all our vegetarian and pescetarian family members. Most years, the carnivores of the family will try a bite or two but they never get more- that is, until last year. Last year, I decided to make this cornbread stuffing and everything changed. Instead of having plenty of my stuffing left and none of the "real stuff" as they call it, mine was the first gone and I could hardly get seconds.

Vegetarians and meat eaters alike love this stuff. And really, I cannot blame them. It tastes like home, happiness, Thanksgiving traditions, a dash of sweet, and a bit of salt all mixed in one. This is seriously the best stuffing ever. If you have looked at the ingredients, you may be thinking that I have lost my mind since it has chicken broth as an ingredient. Well, I have not lost my mind and forgotten that chicken is a meat. Thankfully, this is an easy swap out of vegetable broth instead of the chicken.

The reason I did not put this recipe on the blog last year is because I needed some family guinea pigs to see if it was just as good with the vegetable broth. Turns out, it is! Even my brother-in-law's mother, a southern cook extraordinaire, loved it. So, here are the simple changes I made.

  1. Switch out chicken broth for vegetable broth
  2. Use 3/4 cornbread and 1/4 white
  3. After adding the broth I let it sit overnight and added a bit more before sticking it in the oven.
  4. No breadcrumbs over top.
  5. And finally, here is a direct link to the recipe to make life a bit easier :)

This recipe is so simple and so good, I suggest everyone throw out their other Thanksgiving stuffing plans for this year and do Vegetarian Cornbread Stuffing instead! Trust me, you would not regret the decision ;)

As far as vegetarian and healthy sides go, I will also be making this Sweet and Spicy Brussels Sprouts recipe for Thanksgiving this year. Since we have some family who enjoy spicy and some that do not, my plan is to add no chili flakes to one batch and have another that is spicy enough for everyone to enjoy! Gah, I cannot wait to put all these in my mouth!

Also, as I write this I have an adorable, giant baby cat purring on my lap and snuggling my face. If you, like me, cannot get enough of adorable baby cats, I would suggest heading over to my insatgram page for blog updates and all the adorable cat pics your heart desires!

And, we will be having a motivation post a bit later today.

Blue Apron Cook Book

by Jenni in Food

Summer Cooking with Blue Apron- Cook Book
Summer Cooking with Blue Apron- Cook Book

There have been many people I have talked with who either have too big or too little a family to justify Blue Apron, are unsure about getting food in the mail, or are not in an area that Blue Apron delivers to. All of them, however, either loved Blue Apron's food or love the way it looks. For those and everyone else out there who enjoys eating, you are in luck! The hubs just informed me a few days ago that Blue Apron now has a cook book and it is on pre-order.

The book is filled with Blue Apron's favorite summer recipes in their always easy to understand format. Blue Apron has taken 50 of their most popular summer recipes, improved on them based on customer feedback, and added them to a cookbook just for us. I love Blue Apron's recipes and am so excited to see the improvements they have made to already yummy meals. The cookbook also has dessert recipes and a whole rundown on different summer foods.

What I love more than any of this is the Feast with Friends section. Sure, a good cocktail and dessert is almost always appropriate, but being able to share some of these ridiculously good meals with friends makes me over the moon excited! Hopefully the title, Summer Cooking with Blue Apron- A Collection of Simple, Seasonal Recipes Vol. 1, is a good indication of what Blue Apron has planned for the future. Yes, I will be pre-ordering this one and all other seasonal cookbooks they are [fingers crossed] making throughout the year!

Summer Cooking with Blue Apron is currently on pre-order until July 31st. Best to order yours ahead of time since they have knocked the price down to $22.95 (from $29.95) until the pre-order has ended. Did I mention that it is a limited edition? Better get to the getting!

Also, if you have not read it yet, here is my review of Blue Apron and Hello Fresh :)
